To begin with, you need to understand that terrine is not the name of a dish but a method of cooking it. The term "terrine" refers to fish, vegetable, or meat dishes served in the form of thin slices of bread.

Food blogger yaroslavskyi_vova shared a recipe for an incredible duck terrine on Instagram. He also told us what is the best way to stuff a duck to emphasize the bird's taste.

Ingredients.

  • duck - 1 piece (about 2 kg)
  • mushrooms - 200 g
  • onion - 150 g
  • lard - 90 g
  • pork - 200 g
  • cream (30%) - 200 ml
  • nuts (pistachios or other to taste) - 120 g
  • allspice and black pepper, nutmeg - to taste

How to cook

1. Disassemble the duck with a "shirt", that is, remove the meat from the bones without damaging the skin. Leave the meat on the skin.

2. Collect all the trimmings from the wings, backbone and legs, as well as the fat, separating it from the skin.

3. Chop the mushrooms and onions into small cubes. Fry in a frying pan until golden brown.

4. Add mushrooms, salt and pepper to the vegetables. Fry until tender.

5. Pass the lard, pork and all the trimmings from the duck through a small meat grinder. Add the fried vegetables, spices, cream, nuts and salt.

6. Mix and beat the minced meat well.

7. Season the "shirt" with salt and pepper, fill with minced meat and tie it with culinary thread to form a roll.

8. Bake in a preheated oven to 150 degrees for 50 minutes with the convection mode on. You can add a little water during baking.

9. You can also divide the terrine into two parts, put it in a sleeve and bake for 40 minutes. When the dish is ready, open the sleeve and let it brown.
