Tongue Sülze: how to cook a popular holiday appetizer in a delicious way

Tongue Sülze is a popular holiday dish. You'll need beef tongue, because it boils quickly enough and is very tender. And to make the mass harden quickly, you will need gelatin.

The idea of making a delicious tongue Sülze was published on the Instagram page of food blogger Lilia with the nickname liliya.cooking. In no case should the meat broth used to fill the tongue boil too much so that it does not become cloudy.

Ingredients:

  • beef tongue - 1.3 kg
  • onion - 2 pcs.
  • black peppercorns
  • allspice
  • bay leaf
  • salt
  • chicken fillet (for broth)
  • gelatin - 3 tsp per 750 ml. broth

Method of preparation:

1. Wash the tongue and cook for 2.5-3 hours with salt, pepper, bay leaf and onion.

3. After the tongue is cooked, put it in a bowl and cover it with cold water so that it is well cleaned.

4. Put the cleaned tongue in the refrigerator for at least 2 hours.

5. Cook the fillet for the broth separately.

6. It is worth boiling a day in advance so that the broth can stand in the refrigerator and become clear. If you are cooking right away, cook over low heat.

7. Strain the broth through cheesecloth.

8. Add the melted gelatin to the broth, do not bring to a boil.

9. Slice the tongue, put it on a plate.

10. Garnish, cover with broth and refrigerate until frozen.
