Vegetables are a great ingredient for healthy meals, but sometimes eating a simple salad is quite boring. In this case, you can use a good recipe for a healthy lunch that takes no more than 15 minutes to prepare. It was published on the @on.trac5 Instagram page, which is run by coach and athlete Christian Petracca.

Boil the rice first, and in the meantime, add some beef to the pot and cook until browned. Add some chili if you like. This dish also works well if you have some chili con carne or rice left in your fridge.

When they are both almost ready, take a bowl and place a small pita bread in it. Beat the egg and pour it on top of the pita. Place in the oven for a few minutes until crispy.

Add the rice and beef to the pita bread and sprinkle the grated cheese on top. Put it in the oven for a few more minutes until the cheese melts.

Next, chop the green pepper, red pepper, and red onion into small pieces. Then add on top of your shell. If you have a can of candy corn, feel free to add some.

You can also add jalapeno slices for a little extra spice if you like. That's it – your lunch dish is ready!
