Green onions are a real gem filled with useful microelements. Moreover, you don't have to wait for the warm season to always have juicy sprouts at hand as it's very easy to grow green onions on your windowsill.

After chopping green onions during cooking, there is usually a little white part with roots left over, which most people throw away. Experts told us how to grow a new crop from these leftovers and get even more delicious green shoots, regardless of the season and weather outside.

How to grow green onions in water

You can use the same green onions you bought at the store to grow a new crop. By following these simple steps, you can watch green onion sprouts begin to grow from the scraps in just a few days.

  1. Choose green onions that have healthy white roots attached to the bulb.
  2. Use a knife to cut off the green stems and the white lower parts 2.5 cm above the roots.
  3. Place the trimmed part of the bulb together with the tips of the roots in a clear glass jar. The roots should touch the bottom of the jar.
  4. Add pebbles or balls around the roots to keep them stable and upright in the jar.
  5. Add a small amount of water to the bottom of the jar so that the roots are submerged but the rest of the cut end is above the water.
  6. Place the jar on a sunny windowsill to grow. Change the water every few days to prevent root rot.
  7. After a few days, you will see green sprouts growing in the center of the root. After about a week, the new green shoots will reach their full size.
  8. Remove the onion from the water and cut off the new shoots, leaving 2.5-3 cm above the roots as before. Place the roots back in the jar and fill it with fresh water to grow more green onions.

How to grow green onions in a pot

You won't be able to grow green onions in water forever because the plant will eventually weaken and stop producing, so you need to move the plants from water to soil. Here's how to grow green onions in a pot.

Follow the first two steps described in the previous paragraph. Choose a growing container with drainage holes so that the water can drain away quickly as this will prevent root rot. Fill it with well-drained potting soil.

Place the bulb with the roots in the soil, except for the top of the cut bulb. Place the pot on a sunny windowsill and water it once a week or when the soil becomes dry.

Harvest the new green shoots with scissors, cutting close to the soil level.

How to store green onions

There are several ways to extend the shelf life of sprouts. You can put the onions in a jar filled with water and place the onion "bouquet" in the refrigerator.

Another storage technique involves sealing the onions with a slightly damp towel in a zip-top plastic bag. Whichever storage technique you choose, inspect the green onions every few days, removing sprouts that show signs of wilting or rotting.

Please note that in water, onions lose their flavor after each new sprout, but in soil, the plant will retain its taste and aroma.
