Flavorful and rich kharcho soup: how to prepare a popular dish for a hearty lunch

Kharcho is a popular Georgian soup. It is made with a lot of meat, spices, and rice. The broth is quite thick and rich, so this dish is perfect for lunch.

The idea of making kharcho soup for lunch was published on the Instagram page of food blogger Iryna Lazun (iren.lazun). It is important to add all the ingredients in the correct order.

Ingredients:

  • beef - 350 g
  • potatoes (optional) - 3 pcs
  • rice - 100 g
  • plum puree dressing - 1 pack
  • walnuts - 30 g
  • cilantro or parsley - a couple of sprigs
  • garlic to taste
  • bay leaf
  • water - 2 liters

Method of preparation:

1. Cut the meat into small pieces, put it in a saucepan, cover with water, and let it cook for about an hour. Do not forget to periodically remove the foam from the broth.

2. Meanwhile, peel the potatoes and cut them into cubes (you can also skip them).

3. Rinse the rice.

4. When the broth is ready, add the rice to it and cook until almost ready.

5. Add the chopped potatoes to the rice and cook for 15 minutes until the potatoes are soft. Depending on the variety, the cooking time may vary.

6. Then add the plum puree dressing, mix well and cook for another 2-3 minutes.

7. Chop the walnuts, grate the garlic and add everything to the broth. Bring to a boil, add finely chopped cilantro, turn off the heat and let the dish brew for 10-15 minutes.

8. Garnish the soup with finely chopped herbs when serving.
