What to cook with asparagus beans: an idea for a quick meal

Asparagus beans are a seasonal summer vegetable that many housewives plant in their gardens. And even though they have a dense texture, they become very tender and soft when cooked. Therefore, it is an ideal basis for making a fresh and healthy salad.

The idea of making salad with asparagus was published on the Instagram page of food blogger Tetiana (_tanyushina_).

Ingredients:

  • young asparagus beans - 400 g
  • eggs - 4 pcs
  • peas - 1 can
  • onion - 1 bunch
  • mayonnaise - 2-3 tbsp
  • garlic - 2-3 cloves
  • ground black pepper
  • mustard in grains - 1 tsp
  • pickled cucumbers - 2-3 pcs (optional)

Method of preparation:

1. Cut beans into 2-3 pieces and boil in salted water for 5 minutes.

2. Drain and rinse well with cold water.

3. Leave for an hour so that the beans cool down completely and all the water is drained.

4. Put the beans in a bowl, add diced eggs, green peas, and chopped onion.

5. Season the salad with mayonnaise, garlic, black pepper and mustard.
