Ingredients:
- 1-2 eggplants
- 2-3 tomatoes
- cilantro (can be replaced with dill or parsley)
- 3 tbsp. sour cream
- 1-2 cloves of garlic
- 50 g walnuts
- salt

1. Slice the eggplants into half rings (if large, quarter rings).
2. Place on a parchment-lined baking tray, grease with oil and bake for about 25 minutes in an oven heated to 200 degrees Celsius.

3. You can turn them over during the baking process.

4. While the eggplants are baking, make the dressing. Place sour cream, garlic, nuts, salt in a blender bowl and whisk until smooth.

5. Place chopped tomatoes, finely chopped cilantro, roasted eggplant and dressing in a bowl.
