  • 380 g. sifted flour
  • 100 ml. warm milk 3,2%.
  • 80 g. sugar
  • 2 eggs
  • 1 tsp. turmeric
  • 100 g. soft butter 82% fat
  • 20 g. dry yeast (or 90 g. fresh)
  • 10 g. vanilla sugar
  • 1 tsp. lemon juice
  • a pinch of salt
  • a pinch of nutmeg

  • 50 g. blue raisins
  • 50 g. light raisins
  • 50 g. cranberries
  • 80 g. candied fruit
  • 30 g. dried apricots
  • 50 g. rum for soaking raisins
  • 50 g. soft butter
  • 2 tbsp. sugar
  • 1 tsp. cinnamon

1. For the dough, add 1 tbsp of sugar and yeast to warm milk, stir and set aside in a warm place to activate (20 minutes).

2. Beat eggs well with sugar, vanilla sugar and salt.

3. Add a pinch of nutmeg and turmeric to the sifted flour, pour in the dough, egg mixture, mix everything and add lemon juice with soft butter.

4. Knead the dough for 15 minutes. At first it will stick to your hands, then it becomes elastic (do not add any more flour). Try not to warm the dough in your hands.

6. While the dough is rising, wash the raisins and pour over the rum.

7. Knead the dough, sprinkle a little flour on the work surface, roll it out into a thin layer and brush with soft butter.

9. Roll into a roll, cut in half, but not completely (leave about 4-5 cm).

12. Bake in a preheated 180 degree oven for 45-50 minutes.

13. If the crunch is browned on top, but not yet ready, cover with foil or parchment to prevent it from burning.
