If you have frozen peas in your freezer from the summer, you can use them to make a light and nutritious salad. The ingredient goes very well with mint, which is exactly the kind of fresh flavor that is lacking in winter. All you need for the dressing is olive oil and a little lemon. This dish is often prepared for the family by former US First Lady Michelle Obama.
The idea of preparing a green pea salad that can be spread on bread was published on the Instagram page of food blogger Inna Levenets (inna_levenets).
Ingredients:
- 1/2 cup green peas (frozen)
- thinly sliced shallots
- leeks
- grated zest and juice from a lemon
- 1/4 cup of olive oil
- 2 tsp agave syrup
- fresh mint
- salt and pepper to taste
Method of preparation:
1. Boil the peas.
2. Blend it in a blender until smooth with oil, syrup, and lemon juice.
3. Put the rest of the peas in a deep bowl, and mix with the chopped shallots, leeks, and mint. Season with salt and pepper, and add grated lemon zest.
4. Mix with pea puree.
5. Spread the salad on toast. You can add a little avocado and parmesan (vegan or regular).
