Beetroot salads are a versatile dish that can be eaten every day. Beets go well with all vegetables, as well as legumes and herring.
Cook Iryna shared a recipe for a delicious and healthy beetroot salad with herring, peas and herbs on Instagram.
Ingredients:
- herring - 300 g
- 1 boiled beetroot
- 0.5 red onion
- 0.5 tin of canned peas
- dill
- oil
- black pepper
Marinade for onions:
- 1 tsp. salt
- 1 tsp of sugar
- 1 tbsp. l. vinegar
- 0.5 cups of water
Method of preparation:
1. Chop the onion, add salt, sugar, vinegar and water. Stir and leave for 20 minutes.
2. Cut the herring and beetroot into strips.
3. Mix all the ingredients, season with oil and add black pepper, mix well.
