Eggplant caviar is a very tasty appetizer that can be cooked in a pan. You can add garlic and hot pepper for a spicy flavour.

Culinarian Savva Lybkyn shared a recipe for delicious eggplant caviar with tomatoes, garlic and herbs on Instagram.

Ingredients:

  • eggplants - 3 pcs.
  • onion - 2 pcs.
  • tomatoes - 1-2 pcs.
  • garlic - 2-3 cloves.
  • sunflower oil - 2 tablespoons.
  • herbs - 0.5 bundle
  • salt - to taste

Method of preparation:

1. Peel and bake the vegetables. Chop onions finely.

2. Remove the flesh from the eggplants and chop together with the other vegetables. Add garlic and herbs.

3. Mix everything up and enjoy!
