Carrots and apples are ingredients that can be the basis for a healthy and vitamin-packed salad. By preparing it without mayonnaise and choosing a tasty dressing, you can eat it even during Lent. This dish tastes especially good with greens or nuts.
Chef Anatoii Dobrovolskyi (dobrovolskiy_hchef) shared a recipe for a healthy carrot and apple salad with a delicious dressing on his Instagram page, which you can prepare in 5 minutes.
Ingredients:
- green apple - 1 pc
- carrots - 2 pcs
- nuts - 50 g
- olive oil - 2 tbsp
- honey - 2 tbsp
- juice of 1\2 lemon
- zest of 1\2 lemon
- mint - 4-5 leaves
Method of preparation:
1. Grate apples and carrots on a Korean carrot grater.
2. Chop the nuts and lightly fry them in a frying pan. Add to the apples and carrots.
3. For the dressing, mix the oil, honey, juice and lemon zest. Stir and dress the salad.
4. Sprinkle with chopped mint when serving.
