Beet roll with herring: a refined appetizer from simple products

We most often come across the combination of beets and herring in the Shuba or Fur Coat salad. But for summer, this is a rather heavy and high-calorie dish. Besides, it's made with mayonnaise, which is not very healthy. Therefore, it is worth preparing a simple alternative in the form of a roll.
The idea of making a hearty beetroot roll with herring was published on the Instagram page of food blogger Maria (marichka_cooking).
Ingredients for the base:
- beets - 2 pcs. (boiled or baked)
- eggs - 3 pcs.
- salt -1/2 tsp.
- flour - 4 tbsp.
Ingredients for the filling:
- herring fillet - 1-2 pcs.
- cream cheese - 250 g
- dill - a bunch
- pickled or fermented cucumber - 1-2 pcs.
Method of preparation:
1. Grate beets on a fine grater.
2. Separate whites from yolks.
3. Add yolks to the beets and season with salt.
4. Add flour and mix well.
5. Add a pinch of salt to the whites and beat with a mixer until white and thickened.
6. Mix it with the beets.
7. Put into a baking dish covered with baking parchment and form a rectangle.
8. Put in the oven preheated to 170 degrees for 15 minutes.
9. Remove the parchment and cool slightly.
10. Mix cream cheese with finely chopped dill
11. Cut herring and cucumber into strips.
12. Spread the beetroot base with cream cheese and dill, add cucumber and herring, roll it up and wrap it in cling film, and refrigerate overnight.
