White Chocolate Easter cake: No need to bake
If you do not want to work with yeast dough for the easter cake, you can use the no-bake technique. The sweet curd mass goes well with white chocolate and candied fruits. The pastry has a nice white color and hardens in the refrigerator.

Ingredients:
- 400 grams of grain cottage cheese 9%
- 3 yolks
- 100 g of cream 20% (or 33%)
- 30 g sugar
- 50 g butter
- 80 g white chocolate
- 100 g raisins or candied fruits
- 10g vanilla sugar
Method of preparation:
1. You will need gauze, a blender, a saucepan and spatula, and a pasta mold. If you don't have a special mold, try something conical, with a hole in the bottom or even a flower pot - there's a hole in the bottom.
2. It is important to squeeze the cottage cheese at the beginning.
3. Put the cottage cheese, egg yolks, sugar and cream in a saucepan, beat well with a blender to a creamy mass. If you do not have a blender, the cottage cheese must first be rubbed through a sieve.
4. Put the saucepan on the stove and, stirring intensely, bring the mixture until the first "bubbles" appear, but do not boil, but immediately remove from the heat. Do not be afraid that the mixture has become liquid - this is normal.
5. Add the white chocolate and butter directly into the hot mixture and stir with a spatula until dissolved.
6. Add pre-blanched raisins or candied fruits (you can soak overnight in brandy).
7. We put gauze in the form (the form stands with the narrow edge down). And pour out all the still warm mixture, compact a little with a spoon, fold the end of the gauze up and put it in the refrigerator for 24 hours, or at least from evening until morning.
8. In the morning, decorate with white chocolate, candied fruits, nuts. Store in the refrigerator for up to 5 days, covered with cling film.
Tips:
- Cream can be replaced with sour cream 20%;
- If there are no raisins, put dried fruit or candied fruits;
- The chef advises against dried apricots, because in combination with cottage cheese they give a metallic flavor;
- Make it without raisins - add more sugar;
- Nuts can be changed as desired.
