"Medovik" is one of the most popular homemade cakes. Tender and fluffy cakes are traditionally smeared with buttercream or condensed milk cream. But there is a much tastier and simpler idea. You'll need mascarpone for this one.

The idea for the mascarpone honey cake is posted on the Instagram page of food blogger Daria with the nickname recepti_misis_dolly.

Cake ingredients:

• 50 g butter
• 100 g honey
• 40 g sugar
• 1 egg
• 300-350g flour (adjust to consistency)
• 1 tsp. baking powder
• vanilla
• pinch of salt

Ingredients for the cream:

• 350g mascarpone
• 0,5 l of cream 33%
• 120g powdered sugar or regular sugar
• walnuts (can be without)

Method of preparation:

1. Melt the butter, honey and sugar on the fire. Pour into a bowl, add the egg and stir quickly so that the protein does not curdle.

2. Add flour, baking powder, salt and vanilla. Knead into a soft elastic dough.

3. Shape into 12 circles.

4. Roll out very thinly, dusting constantly with flour. The diameter is about 22 cm.

5. Prick with a fork and bake at 180 degrees for 3 minutes. As soon as we take each crust out of the oven, immediately cut out an even circle.

6. Shape with a lid or whatever you like. Leave the edges to finish. The cakes will be soft at first and then harden.

7. Beat the mascarpone with the powder, gradually pour the cream - the cream is ready.

8. Assemble the cake in a split ring, generously smearing each layer with cream. Place in the refrigerator for 4 hours.

9. Sprinkle the top with crushed crumbs.

10. If desired, you can decorate the sides with chopped walnuts.
