Ingredients for streusel:

  • 30 g flour
  • 2 tbsp sugar
  • 1 tbsp of room-temperature butter

Ingredients for cupcakes:

  • 2 large eggs
  • 125g vegetable oil
  • 120 g sugar
  • zest of 2 lemons
  • 125 ml kefir
  • 60 ml lemon juice
  • 2 tsp of baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 250g flour

Method of preparation:

 

1. Preheat the oven to 190 degrees. Line the muffin tin with paper liners.

2. First, prepare the streusel: combine the ingredients and rub them together into crumbs with your fingers.

3. Whisk together the eggs, vegetable oil, sugar, and zest in a bowl. Add the kefir and lemon juice.

4. Combine all the dry ingredients and pour in the liquid ingredients. Mix until everything comes together, don't knead too hard.

5. Fill molds with batter, sprinkle streusel on top, and bake for 20-23 minutes. You can check the readiness with a toothpick (it should come out of the muffin dry).

6. Very tasty to eat with soft butter or cream cheese.
