Nourishing potato palyushki with onions and cracklings: an alternative to lazy dumplings

Palyushki is a hearty dish of Ukrainian cuisine, based on mashed potatoes. In appearance and method of preparation, they somewhat resemble salty lazy dumplings, which can also be made with stuffing: meat, minced meat or cheese.

On her Instagram page, food blogger Svetlana Vergun(_svetlana_verg) shared her recipe for hearty mashed potato palyushki, which are especially delicious served with greaves and onions.

Ingredients:

  • boiled potatoes - 1 kg
  • eggs - 4-5 units
  • flour - 2 tbsp.
  • salt - 0,5 tsp.
  • bacon and onions for croutons

Method of cooking:

1. Boil the potatoes until tender. When cooked, mashed potato and cool.

2. In the meantime, prepare the roast. To do this, chop the onion and bacon and fry until golden.

3. When the potatoes have cooled, add eggs, salt, flour. Knead the potato dough.

Form the dough into finger-sized palyushki.

5. Boil them in salted water and serve with cracklings.
