Japanese Mochi: How to make a popular dessert at home

"Mochi" are colorful Japanese cakes with filling. They are made with rice flour. The dough comes out very soft and elastic. The inside is usually filled with cream cheese, condensed milk and berries.
The idea for the popular Japanese dessert "Mochi" is published on the Instagram page of food blogger ValeriaDemenchuk (mrs.demenchuk). Making the dish at home is easy enough.
Ingredients for the dough:
- water - 110 ml
- milk - 120 ml
- sugar - 70 g
- salt - pinch
- glutinous rice flour - 170 g
- vegetable oil - 30 ml
- dye (as desired)
- any fruits/berries - 100g
- sugar - 15 gr
- corn starch - 5g
Ingredients for the cream:
- cream cheese - 200 gr
- condensed milk - 60 g
- powdered sugar - 20 gr
Method of preparation:

1. Mix the water, milk, sugar and salt thoroughly with a whisk. Add the flour, mix with a whisk. Add vegetable oil, dye, and mix. Cover with clingfilm, make holes with a knife and put in the microwave for 3-4 minutes.
2. The dough should resemble plasticine. Cover with clingfilm and let cool completely.
3. Whip the strawberries, sugar and starch with a blender, bring to a boil over low heat and cook until thickened. Let cool completely.
4. For the cream, whip everything with a mixer until a thick, firm mass.
5. You can divide the dough into six pieces at once and flatten each piece with your hands.
6. Sprinkle the table, rolling pin and dough (it is sticky) well with starch. Roll out the dough and cut into 6 pieces.
7. Make a "nest" in the center of the cream, stuff the stuffing inside and cover the stuffing with a "hat" of cream.
8. Roll each edge of the dough to each other. The dough will mold well, so you can gently seal all the edges. Place in the refrigerator for 1-2 hours.
