The classic Ukrainian Easter cake is traditionally made with yeast dough, but it's usually a long process and takes a lot of time. But there is an alternative - a pastry without yeast, which is based on the simplest cottage cheese dough.

On her Instagram page, food blogger Olga Golovina(olha.holovina) shared a recipe for a yeast-free curd dough Easter cake, which you can make in just 1 hour.

  • eggs - 3 pcs.
  • flour - 220 g
  • sugar - 130 g
  • 9% cottage cheese - 300 g
  • butter - 100 g
  • baking powder - 12 g
  • soda - pinch
  • salt - pinch
  • vanilla, vanilla sugar - to taste
  • raisins/candied fruit- 100 gr
  • lemon peel

Method of preparation:

1. Pour warm water over the raisins in advance for a while. After draining the water and dry them.

2. 2. Break the eggs into a bowl and gradually beat the mixture with the sugar until it is light and fluffy. Add the melted butter, which should be at room temperature.

3. Lightly beat the cottage cheese with a blender and add it to the batter. Stir to combine.

4. Pour the baking soda, salt and vanilla sugar. Stir again. If desired, you can add lemon zest and raisins at this stage. In two steps sift the flour, add the baking powder. Use a spatula to knead a homogeneous dough.

5. Grease the molds with vegetable oil and fill half of the dough. Use a spoon to smooth out the surface. Bake at 180 degrees for 50 minutes.
