Homemade soft bagels like fluff: what kind of dough is best to make them from

Bagels are a very tasty homemade pastry that can be made with different fillings: poppy seeds, cherries, apples, jam or chocolate, and from a variety of dough: yeast, sheet, phyllo or custard.
One of the cooking blogs(diali_cooking) on Instagram published a recipe for bagels made with yeast dough, which come out puffy as fluff.
Ingredients:
- warm kefir - 250 ml
- sugar - 3 tbsp.
- butter - 5 tbsp.
- 2 eggs + 1 egg yolk for grease
- salt -
- dry yeast - 0,5 tbsp.
- flour - 600-650 g
Cooking method:
1. Dissolve the yeast in warm kefir, add salt, sugar, eggs and vegetable oil. Stir.
2. Add the sifted flour and knead an elastic dough, cover with cling film and leave in a warm place to rise well.
3. Divide the finished dough into two pieces, each of which is rolled out and cut into triangles. Place the filling and wrap in a bagel. Place the bagels on a baking sheet and cover with a towel to rise.
4. Brush the bagels with the egg yolk and milk mixture. Bake at 180 degrees until tender.
