Easter Salads 2023: three recipes for every taste

At Easter, not only are Easter cakes and Easter eggs prepared, but many other delicacies as well. These are usually homemade sausage, baked meats, and salceson, as well as tasty salads.

FoodOboz editors have prepared for you a selection of three simple salad recipes that are great for the Easter table.

Kaleidoscope salad with mayonnaise(the recipe was published in one of the cooking blogs zhuravlina_cooking on Instagram).

Kaleidoscope salad in piles with mayonnaise

Ingredients:

  • ham (smoked chicken fillet or dry sausage) - 150 g
  • cucumber - 2 medium-sized pieces
  • hard cheese - 100 g
  • green onions - 30 g
  • Korean carrots - 150 g
  • sweet pepper - 1 pc
  • croutons - 70 g
  • mayonnaise - 100 g
  • Mustard with grains - 1 tsp.

Method of preparation:

1. Cut the peppers and ham in sticks. Cut most of the cucumbers into sticks and the rest into circles.

2. Cut the hard cheese into julienne slices or grate it on a grater.

3. Chop the green onions.

4. Place all the prepared ingredients on a plate in piles, put cucumber inside, cut into circles.

5. Between each pile place a strip of mayonnaise from edge to middle.

Berlin salad with mayonnaise(the recipe was published by food blogger Maria Mikhalchenko with the nickname smakoluk.ua on her Instagram page).

Berlin salad with mayonnaise

Ingredients:

  • ham or chicken fillet - 300 g
  • pickles - 300 g
  • sweet bell pepper or cherry tomatoes - 1 pc
  • eggs - 2 pcs
  • whites - 2 pcs
  • green onions - bunch
  • hard cheese - 100 g

Dressing:

  • yolks - 2 pcs
  • mayonnaise - 2 tbsp.
  • mustard - 1 tsp.
  • salt, pepper

Method of preparation:

1. To make the dressing, mash the yolks with mustard with a fork. Add mayonnaise, salt, pepper and mix until smooth.

2. Chop or dice the ham, peppers, cucumbers and eggs, chop the green onions.

3. Cut the cheese into large cubes.

4. Put all the ingredients in a bowl, add the dressing and mix. It is better to put the salad in the fridge for 1 hour, so it will be even tastier.

Salad with chicken liver (the recipe was published by food blogger Irina Dimitrova with the nickname iriska_dimitrova on her Instagram page).

Chicken liver salad

Ingredients:

  • chicken liver - 300 g
  • onions - 1 pc
  • eggs - 2 pcs
  • pickles - 2-3 pcs
  • vegetable oil
  • salt, pepper
  • mayonnaise/sour cream + mustard

Method of cooking:

1. Wash liver, clean off excess, roll in flour and fry in a frying pan heated with oil until golden brown. Sprinkle the cooked liver with salt and pepper, cool and cut into julienne slices.

2. Cut the onion into half rings and fry until transparent in a little vegetable oil.

3. Grate carrots and add to onions. Fry until golden.

4. Beat the eggs with salt. From the resulting mass fry two egg pancakes and cut them into sticks.

5. Cut the cucumbers into sticks.

6. Put all the ingredients in a bowl, add salt and pepper, season with mayonnaise or sour cream and mustard.
