Cherry pies in the oven, like fluff: what ingredient should be added to the dough

The most important thing in the process of making homemade pies is to make a successful dough, which determines the taste and shelf life of the baked product. The filling can be anything: salty or sweet.
On her Instagram page, food blogger Oksana with the nickname ksu_foodbloger shared a recipe for homemade cherry pies, which turn out soft as fluff. It is advisable to add very little alcohol to the dough, namely vodka, which makes the pastry especially fluffy and allows it to last longer.
Ingredients:
- flour - 500-700 g
- dry yeast - 11 g
- sugar - 100 g
- salt -
- warm milk - 300 ml
- eggs - 2 units
- sour cream - 1 tbsp
- melted butter - 80 ml
- vodka - 0,5 tbsp.
- cherry or cherry jam for stuffing
Method of preparation:
1. Sift the flour into a bowl, make a well inside, pour the yeast and 1 tbsp. sugar.
2. Separately, beat the eggs and sugar with a whisk.
3. Pour the melted butter and sour cream gradually into the mixture. Stir with a whisk. At the end add the vodka and stir again.
4. Pour the warm milk and egg mixture into the dry ingredients. Mix first with a spatula, then continue to knead the dough with your hands. It should be soft and elastic. When ready, leave the dough in the heat for 30 minutes.
5. Roll out the dough into a sausage and cut into portions. Form each piece into balls, gently roll them out, place the filling and form the pies.
6. Grease the pie with a mixture of egg yolk and milk. Bake at 190 degrees for 50 minutes.
