What to substitute for meat in cold soup: a budget-friendly recipe with mineral water
Okroshka is a cold soup made with readily available ingredients and supplemented with fresh vegetables. It can be served with yogurt, sour cream, kvass, or mineral water. One of the key ingredients in the dish is sausage or meat. However, if you don't have these on hand, you can easily substitute them with fish.
Nutritionist Olga Usenko (usenochka) shared a recipe for okroshka with fish in mineral water on her Instagram page.
Ingredients:
- boiled potatoes - 2 pcs.
- cucumbers - 2 pcs
- radish - 200 g
- lightly salted fish - 200 g
- mineral water - 1 liter
- eggs - 3-4 pcs
- yogurt - 400 ml (vegan or lactose-free is best)
- mustard - 1 tsp
- lemon juice
- herbs
- salt
Method of preparation:
1. Cut vegetables, eggs and fish into cubes.
2. Chop the greens.
3. Mix all the prepared ingredients.
4. Add yogurt and pour water, or pre-mix yogurt with water and pour ready-made dressing.
5. Add spices, lemon juice and mustard.
