What to make mayonnaise with except eggs: a budget technology
There are many variations of making homemade mayonnaise, which is why many people prefer this sauce to buying it in stores. The product has a pleasant yellowish color, delicate and rich flavor, and a smooth consistency. All this is due to eggs, which are required according to many recipes. However, there is one much more budget-friendly option.
The idea of making mayonnaise without eggs was published by food blogger Khrystyna with the nickname kristy_cookery on Instagram.
Ingredients:
- 100 ml of milk at room temperature
- 200 ml of olive (or sunflower, can be 1:1) oil
- 1 tbsp of mustard
- 1/2 tsp salt
- 1/2 tsp sugar
- 1-2 tbsp of lemon juice
- 1/2 tsp turmeric for color
Method of preparation:
1. Oil and milk should be at room temperature.
2. Beat them with an immersion blender for 1 minute. The mixture thickens immediately.
3. Add mustard, salt, sugar, lemon juice, and turmeric (since we don't add eggs, you can add a little for color).
4. Mix with a blender until smooth.
5. Store in a hermetically sealed container in the refrigerator for no more than a week.
