If you don't know what you can cook quickly and deliciously for lunch or dinner, but you have minced meat and vegetables at home, this is a great solution. A very satisfying and nutritious vegetable stew with meatballs will come in handy. It's worth noting that this is a really simple and quick dish to prepare, as you can combine the ingredients to your liking.
Nutritionist and food blogger Alex Mil (mil_alexx) shared a recipe for vegetable stew with meatballs on his Instagram page.
Ingredients:
- minced meat – 400 g
- eggs – 1 pc
- onions – 2 pcs
- carrots – 1 pc
- garlic – 2 cloves
- pepper – 1 pc
- tomato sauce – 250 g
- water – 300 ml
- potatoes – 3 pcs
- herbs
- salt, pepper
Method of preparation:
1. Add the chopped onion, egg, salt, pepper, and squeezed garlic to the minced meat. Mix well.
2. Form the meatballs.
3. Fry until golden brown for 2-3 minutes on each side.
4. Cut onion, carrot, and pepper into small pieces.
5. Fry the vegetables for 3-4 minutes.
6. Add the sauce, water, salt and pepper.
7. Add the diced potatoes and meatballs.
8. Simmer under the lid for about 30 minutes. Sprinkle with herbs at the end.
