What to cook after a hearty New Year's feast: a very light and nutritious dish
After fatty and hearty dishes on the New Year's table, the body needs to reboot. So it's a great idea to make a light salad with healthy ingredients. It should definitely not contain mayonnaise.
The idea of preparing a light salad with seafood and vegetables without mayonnaise was published on the Instagram page of food blogger recepty_przepisy. The dressing is made with vegetable oil and lemon juice.
Ingredients:
- 1 packet of salad mix
- 100 g of mussels
- 100 g of cherry tomatoes
- 50 g of black bread croutons
- 1/2 red onion
- 1 cucumber
Ingredients for the sauce:
- 3 tbsp. oil
- 2 cloves of garlic
- 1 tbsp. lemon juice
- 1/2 tsp. salt
Method of preparation:
1. For the sauce, combine the squeezed garlic, oil, lemon juice and salt.
2. Mix and leave for 15 minutes.
3. Cut the tomatoes into four pieces, dice the cucumber, and cut the onion into thin half rings.
4. In a bowl, combine the salad mix, mussels, cucumber, tomatoes, onions, and breadcrumbs.
5. Pour in the sauce and mix thoroughly.
6. Put on a plate and garnish as desired.
