What to add to minced fish cutlets to make them juicy: a very simple ingredient

Minced fish cutlets are a very nutritious dish that goes with any side dish. They are much healthier than meat products. And to make them juicy and soft, you need to add one simple ingredient.
The idea of making juicy fish cutlets was published on the Instagram page of food blogger Victoria with the nickname vika_tolokova23 . Add a little lard to the minced meat.
Ingredients:
- 500 g of minced fish
- 50 g of lard (it should be passed through a meat grinder)
- 1 large onion (or 2 medium ones)
- 1-2 slices of bread
- milk
- 50 g of butter
- salt, pepper, spices to taste
- 1 tsp of sugar
- 1 egg yolk
Method of preparation:
1. Pour milk over the bread and let it stand for a while.
2. Put the onion, butter (soft), and pressed bread into a chopper.
3. Add about 30 ml of milk (from the bread).
4. Beat until smooth and add to the minced meat.
5. Add salt, sugar, pepper, spices and egg yolk to taste.
6. Mix everything well, cover with cling film, and refrigerate for 30 minutes.
7. After that, form the cutlets and roll them in breadcrumbs.
8. Fry over medium heat on each side for 4 minutes.
9. Put the finished cutlets on a plate.
