What to add to batter to make moist and lush cupcake

A flavorful and moist muffin is a successful home baking for tea. The batter can be made with milk, kefir or sour cream and it can be supplemented with raisins, candied fruits, chocolate or berries.
Food blogger Halyna Duma (reeixit) on her Instagram page shared a recipe for a budget muffin with raisins, the batter for which is prepared with kefir. The dish turns out lush, soft and moderately moist.
Ingredients:
- eggs - 2 pcs
- sugar - 100 g
- vanilla sugar - 10 g
- kefir - 250 ml
- butter - 80 g
- flour - 300 g
- leavening agent - 10 g
- raisins - 150-200 g
Method of preparation:
1. First, beat eggs with sugar with a whisk until light and fluffy.
2. Pour kefir and add melted butter and vanilla sugar. Stir.
3. Add flour and baking powder. Stir until homogeneous so that there are no lumps.
4. Add raisins or other dried fruits like cherries, cranberries, etc. Stir.
5. Pour the ready batter into a mold covered with parchment. Bake in a preheated to 160 degrees Celsius oven for 50 minutes.
