Fish cutlets are a great dietary alternative to meat cutlets. Hake or mackerel are often used to make this dish. But pollock is the best choice. The cutlets are very juicy and tender. Especially if served with a delicious vegetable garnish.

The idea of cooking pollock cutlets was shared by the famous Ukrainian chef Yevhen Klopotenko on his official website.

Ingredients for the cutlets:

  • pollock fillet - 2 pcs.
  • breadcrumbs - 3 tbsp
  • water - 200 ml
  • egg yolk - 1 pc
  • onion - 1 pc
  • carrot - 1 pc
  • beets - 1-2 pcs
  • salt and pepper to taste

Ingredients for the garnish:

  • large potatoes - 5 pcs.
  • hard cheese - 100 g
  • turmeric - 0.5 tsp
  • sunflower oil - 1 tbsp
  • lemon juice - 1 tsp
  • salt and pepper - to taste

Method of preparation:

1. Prepare minced fish: pass pollock fillet through a meat grinder. If necessary, do it twice. Peel onion and carrot and cut them into pieces to fit into the meat grinder. Grind the vegetables into minced meat.

2. Soak breadcrumbs in cold water and leave them for 5-7 minutes to swell. Turn on the oven to 180 degrees.

3. Add the breadcrumbs to the minced fish, salt and pepper to taste, and mix well.

4. Add one egg yolk and mix the minced fish well. To prevent the minced fish from being runny, do not add the whole egg.

5. Make a "pillow" for the cutlets from beets: peel and cut into slices about 3-4 mm thick.

6. Put them on the bottom of the baking dish, covering it completely. You can add a little salt.

7. Form small cutlets, put them in the baking dish on a "pillow" of beets.

8. Pour in 100 ml of water and cook in the oven at 180 degrees for 20 minutes.

9. Prepare the garnish: rinse the potatoes well, and cut them into 4-8 pieces without peeling.

10. Season with salt and pepper to taste, add turmeric, and mix.

11. Put the potatoes on a baking sheet, drizzle with lemon juice and sunflower oil.

12. Bake at 180 degrees for 40 minutes.

13. Take out and sprinkle with 100 g of grated cheese.

14. Put in the oven for a few minutes to melt.

15. Serve with the cutlets.
