The list of twelve dishes on every Ukrainian table for Christmas Eve always includes homemade lean dumplings. Traditional fillings are mushrooms or cabbage. It is also a great idea to put potatoes inside. However, to make the serving truly festive and sophisticated, add yam cream.

An exclusive recipe for dumplings with potatoes and yam cream was shared by the winner of the Hell's Kitchen project, chef of the SAZHA restaurant Yurii Didenko (chef_didenko). The filling turns out to be very juicy, the dough is soft and thin, and you will definitely impress the whole family with the serving.

Ingredients:

Dough for dumplings for 1 serving:

Universal flour - 570 g

Milk 2.5% - 240 ml

Salt - 1 g

Egg - 3 pcs.

Butter 72.% - 55 g

Charcoal coloring - 10 g

Method of preparation:

- Bring milk and butter to a boil, add 1/3 of the flour, and charcoal coloring and stir with a wooden spatula. Brew the flour.

- Cool to 55 degrees and add 1 egg at a time, stirring constantly. Add the rest of the flour and salt and knead the dough.

- Put in the refrigerator for 30 minutes.

Filling for potato dumplings for 1 serving:

- Refined sunflower oil - 56 ml

- Salt - 3 g

- Boiled potatoes - 800 g

- White onion - 200 g

Cooking method:

- Mash potatoes. Add salt and fried onions. Season with salt and mix.

- Roll out the dough 1 mm thick. Cut out circles and put the potato filling. Make a dumpling.

Mashed sweet potatoes:

- Sweet potatoes - 1.3 kg

- Water - 2 liters

- Sea salt - 5 g

- Butter 72.5% - 50 g

- Boil the sweet potato in salted water. Beat with a blender and add butter at the end.

How to serve the dish:

1. Boil the dumplings until tender.

2. Boil the mashed sweet potatoes.

3. Put on a plate.

4. Spread with a spoon.

5. Put the boiled dumplings on top.
