Transcarpathian riplianyky instead of dumplings for Christmas: an idea from MasterChef participant
Instead of traditional dumplings, people in Zakarpattia make riplianyky. They are made of potato dough, so they are very soft and juicy. Fried sauerkraut is put inside.
Myroslava Pekariuk, a participant in the MasterChef project, shared the idea of making Transcarpathian riplianyky with sauerkraut instead of dumplings on Instagram. The potatoes for the dough must first be boiled and then grated.
Ingredients:
- mashed potatoes - 600 g
- flour - 250 g
- stewed sauerkraut
- cabbage - 300 grams
- onion - 1 pc
- salt - a pinch
- cumin - a pinch
Method of preparation:
1. Fry finely chopped onion until golden brown in a deep frying pan or a saucepan. Add sauerkraut and cumin.
2. Add water and simmer until the cabbage is tender.
3. Peel pre-boiled potatoes with the skin and grate them on a coarse grater.
4. Add salt and flour and knead the dough.
5. Roll out the dough to a thickness of 1-1.5 cm.
6. Cut out the rings.
7. Put the filling in the center and form the riplianyk according to the principle of making dumplings. Then use a fork to make beautiful edges.
8. Pour vegetable oil into a frying pan, heat it and fry the riplianyky on both sides until golden brown.
9. Serve with mushroom sauce.
