To keep lean dishes from getting boring: red buckwheat porridge for lunch

Lent has begun in Ukraine. This means that most of the time, Ukrainians will be eating meatless dishes. But Lent lasts quite a while, so you should think about how to diversify your diet so that you don't get bored with lean dishes.
A food blogger with the nickname recepti_dariko also thought about this issue. On her Instagram, she shared how to cook red lean buckwheat.
Ingredients
- Buckwheat groats - 200 gr
- Beetroot - 2 pcs
- Green onions - ½ bunch
- Garlic - 1-2 cloves
- Oil - 2 tbsp
- Boiling water - 500 ml
- Salt
Method of preparation
1. Peel and grate the beets on a coarse grater. Chop the green onions and garlic.
2. Put the onion in a frying pan heated with oil and sauté with the garlic for 1-2 minutes.
3. Add the beets, cover and simmer for another 5-7 minutes.
4. Add the washed buckwheat, salt and boiling water to the beets. Stir and cook under a closed lid until the liquid evaporates.
5. Stir and serve with green onions.
