Thin and soft pumpkin pancakes: a recipe for perfect milk batter

Pumpkin is a very healthy autumn vegetable. It contains the necessary vitamins and minerals that the body needs in the fall and winter. That's why it is used to make many different dishes: soups, cereals, juices, desserts and pancakes.
Food blogger Roksolana Harasymiv (roksolana.harasymiv) shared a recipe for thin pumpkin pancakes on her Instagram page.
Ingredients:
- ready-made pumpkin - 120 g
- eggs - 2 pcs
- milk - 300 ml
- flour - 2 tbsp
- avocado oil - 1 tbsp. l.
Method of preparation:
1. Peel the pumpkin and cook it in a way convenient for you: steamed, boiled or baked. The vegetable should be soft.
2. Mash the prepared pumpkin with a fork to a puree, add eggs, milk, flour and olive oil. Mix everything thoroughly.
3. Fry thin pancakes.
4. Eat on their own or with cream cheese, peanut butter, jam or even chicken. Enjoy your pancakes!
