The secret to "unsurpassed" fried potatoes is revealed: just one step will change everything

In his interview with the Mirror, the famous chef Alfie Cutler told us how to cook potatoes to make them the main decoration and almost the main dish on the table. By the way, he also advises that all preparations for the festive table should begin two days before the big day itself. This way, you can save a lot of time. According to Cutler, you can boil vegetables and marinate meat a few days before the holiday dinner. On the day of the celebration, all you have to do is put it on a baking sheet and bake it until it's done.
To prepare the perfect potatoes, it is best to choose a Maris Piper variety and divide them into fairly large pieces as they will lose size during frying. The day before serving, Cutler recommends boiling the potatoes in salt water and leaving them in the refrigerator overnight. This way, the vegetable will become more tender and retain its structure.
It is best to cook such potatoes in animal fat. For this purpose, preheated goose or duck fat is suitable. Add the potatoes to the heated oil and put them in a preheated 200-degree oven for 15 minutes. Then turn the potatoes to the other side and continue baking.
Once the potatoes are golden brown, add garlic, rosemary, and thyme, and then bake for another 10 minutes. Then take out the baking sheet and sprinkle the dish with sea salt.
