Fresh zucchini is best prepared for the winter in the form of caviar. It can be used as a spread, as well added to pasta and other dishes. You can even eat this dish instead of salads.
The idea of preparing delicious zucchini caviar for the winter was published on the Instagram page of food blogger Anastasia with the nickname nastya_yizha. it contains a variety of vegetables and spices.
Ingredients:
- zucchini - 1 kg
- carrots - 300 g
- onion - 300 g
- garlic - 3 cloves
- tomato paste - 70 g
- vegetable oil - 70 g
- sugar - 1 tbsp
- salt - 1 tsp
- black pepper - to taste
- dried garlic and other spices as desired
- vinegar 9% - 1 tbsp.
Method of preparation:
1. Finely chop onion and garlic.
2. Pour oil into a preheated heavy-bottomed saucepan and add the onion and garlic.
3. Stir and fry for a few minutes over moderate heat
4. Meanwhile, grate carrots and add to the onions. Stir and fry for another 3-5 minutes.
5. Peel zucchini (if they are old and the seeds are coarse, remove them as well) and cut them into cubes.
6. Add tomato paste to the carrots and onions, mix and add the zucchini.
7. Add sugar, salt, pepper and spices. Stir everything and simmer over low heat under a closed lid for about 30 minutes. Be sure to stir from time to time so that it does not burn.
8. Whisk the caviar with a blender until smooth, put it on medium heat, bring to a boil and cook for 3-4 minutes.
9. Add vinegar, stir and turn off the heat.
10. Put it in a jar.
