The most delicious seasonal vegetable stew cooked in the oven
A versatile dish in which you can combine many seasonal vegetables is a stew. You don't even have to add meat, because the ingredients are quite hearty and dietary. In addition, the stew is cooked in the oven, so all the ingredients remain healthy.
- zucchini - 2 pcs.
- eggplants - 1 pc.
- carrots - 1 pc.
- potatoes - 4-5 pcs
- potato seasoning - 1 tsp.
- onion - 1 pc.
- tomato sauce - 3 tbsp.
- water - 150 ml
- salt - 1 tbsp.
- hmeli suneli - 1 tsp.
- basil - a few sprigs
- parsley - a few sprigs
- garlic - 2 cloves
Method of preparation:
1. Dice everything.
2. Pre-fry the potatoes with potato seasoning until golden.
3. Add tomato sauce, water, salt and hmeli-suneli.
4. Combine all the vegetables in a heatproof dish.
5. Pour the sauce over and place in a preheated oven at 170 degrees for 50 minutes.
6. Stir or add water from time to time if it starts to burn.
