Char-grilled chicken is fried chicken in a spicy sauce with garlic and seasonings. The most delicious thing about this dish is the appetizing golden crust on top. To achieve this effect, you need to use the following technology.
The idea of cooking char-grilled chicken in a pan was published on the Instagram page of MasterChef super finalist Olha Riabenko (olga_riabenko_). It is best to use a grill pan and cover the meat with a lid while frying.
Ingredients:
- chicken - 2-4 pcs.
For the marinade:
- adjika - 4 tsp.
- garlic - 1 pc.
- lemon - 2 pcs.
- Swan salt - 1 tsp.
- paprika - 1 tsp.
- oil - 80 ml.
- salt, pepper
- butter - 50 g
Method of preparation:
1. Cut chicken along the breast. Cut off the third phalanx of the wing, tail and excess skin.
2. Break the joints on the legs and breast and press well. Do not pound.
3. Season with salt and pepper, pour the juice of half a lemon and leave to marinate for 30 minutes.
4. For the marinade sauce, mix chopped garlic, all the spices, lemon juice and oil.
5. Pour 30 ml of oil into the frying pan and heat well.
6. Put the chicken skin side down and fry under the press for 7 minutes. Then turn over, press again and fry for 7 minutes.
7. Turn over and brush well with the marinade.
8. Add oil. Fry without a press for 2 minutes.
9. Turn over again and brush the other side with the marinade. Fry for another 2 minutes.
