Basque cheesecake is a great alternative to cottage cheese casserole. Its texture is very delicate and airy. That's because it uses cream and almost no flour.

Food blogger Catherine Shevetovskaya(shevetovskaya) on her Instagram page shared a recipe for a delicate Basque cheesecake made of cottage cheese, which even a novice hostess can cope with.

Basque cottage cheesecake recipe

Ingredients:

  • cottage cheese - 1 kg
  • sugar - 300 g
  • vanilla sugar - 20 grams
  • salt - 1/2 tsp.
  • eggs - 7 units
  • 33% cream - 200 ml
  • flour - 2 tbsp.

Method of preparation:

1. First, pour the cottage cheese into a bowl and beat with a blender until a homogeneous creamy consistency.

2. To the resulting mass add sugar and salt. Once again, whisk everything.

How to make cheesecake with cottage cheese

3. Then gradually add one egg at a time and mix the mass well after each one.

4. After the eggs, add the cream in two steps, pour in the flour, and mix thoroughly.

5. Pour the resulting mass into a mold lined with parchment. Bake at 210 degrees for 40-50 minutes.

6. Make sure to let the finished cheesecake cool for 2-3 hours before cutting and serving.
