Sweet pickled cucumbers for winter without vinegar

Cucumbers for winter, as a rule, are canned with vinegar. However, you can do without this ingredient, using herbs and other spices. In this case, you will get delicious pickled cucumbers.
Food blogger Oksana Dorosh (oksana_dorosh_rezeptu) on her Instagram page shared a recipe for pickled cucumbers, which are prepared without vinegar and turn out crispy and sweet.
Ingredients for three-liter jars:
- cucumbers - 1.5-2 kg
- horseradish, currant, cherry leaves
- dill sprigs
- black pepper
- bay leaves
- garlic
Marinade:
- salt - 2 tbsp.
- sugar - 5 tbsp.
- citric acid - 1.5 tsp.
- water
Method of preparation:
1. First you need to soak the cucumbers in cool water for 2-3 hours. Rinse them thoroughly. This way they will be crisp and elastic.
2. Lay out herbs, spices and garlic cloves in a jar.
3. Place the cucumbers in the jars and fill the jars with boiling water. Cover with lids and leave like this for 15 minutes.
4. Drain the water from the jars into a saucepan, bring to a boil and fill the jars with it again. Cover with lids and leave like this for 15 minutes.
5. When the allotted time has passed, drain the water from the jars into a saucepan, add sugar and salt. Bring to a boil.
6. When the marinade boils, turn down the heat and add citric acid.
Secret 1: it is important that the citric acid is fresh.
Secret 2: It is important to reduce the heat when adding the acid, because foam may rise and the marinade will run off on the stove.
7. Pour the hot marinade into jars and seal tightly with lids. Turn the jars upside down, cover with something warm and leave to cool completely. Done!
