If you like fluffy and sweet pancakes, add coconut flakes to the batter. They are especially delicious when served with your favorite jam, fruit, or condensed milk: perfect for tea. To make the frying mass homogeneous and well-fried, cook it with milk.
The idea of making fluffy coconut pancakes was published on the Instagram page of food blogger Kateryna with the nickname katia_cooking. You can adjust the sugar to taste.
Ingredients:
- eggs - 1 pc.
- milk - 200 ml.
- flour - 1 cup
- sugar - 2-3 tbsp
- baking powder - 1 tsp
- a pinch of salt
- vanilla - 0.5 tsp.
- vegetable oil (for frying)
- coconut flakes - 100 g
Method of preparation:
1. Mix the egg with sugar.
2. Mix well.
3. Add vanilla and baking powder.
4. Mix again, sift flour in 2 stages and add milk.
5. Mix well.
6. Add coconut flakes. Mix.
7. Fry the pancakes over medium heat until golden brown.
8. If desired, pour condensed milk or any jam or serve with fruit.
