Stuffed eggplant in the oven: what to use for the filling
Eggplant season is starting in many markets. These vegetables are baked in the oven, fried in a pan, stewed, added to salads, and canned for the winter. If you are looking for a light dish for lunch or dinner, stuffed eggplant will be a great option. You can stuff the vegetables with anything: meat, cheese, and even other vegetables.

Ingredients:
- olive oil – 10 g
- eggplants – 2 pcs.
- salt, spices – to taste
- minced chicken – 300 g
- tomatoes – 3 pcs.
- mozzarella – 250 g
- herbs, parmesan – for serving
Method of preparation:
1. Cut the eggplant in half and make cuts in the form of squares.
2. Sprinkle with salt and drizzle with oil. Bake in the oven for 40 minutes at 180 degrees.
3. Fry the minced meat with tomatoes and green onions.
4. Eggplant mash with a fork, and stuff with the filling.
5. Top with diced cheese and tomatoes. Bake in the oven for 10-15 minutes.
6. Serve with herbs and parmesan.
