Spectacular Illusion cake: how to prepare this unusual dessert

Illusion cake is an exquisite dessert that is worth making if you want to surprise your family with spectacular pastries. Its peculiarity is that the top and bottom layers are chocolate, and the middle is white. Therefore, it seems that it is a solid filling of cottage cheese. But in fact, there is a delicate cream and airy meringue.

The idea for the Illusion cake was published on the Instagram page of food blogger Halyna with the nickname cooking_with_gala.

Ingredients for the batter:

  • egg yolks - 6 pcs.
  • sugar - 250 g
  • butter (soft) - 150 g
  • sour cream - 400 g
  • baking soda - 1 tsp.
  • flour - 400 g
  • cocoa - 20 g
  • ground coffee - 20 g

Preparing batter:

1. Beat yolks and gradually add all the ingredients.

2. Divide the mass into three parts (720 g).

3. Leave the first one white. Add cocoa to the second and coffee to the third. Bake at 180 degrees for 20 minutes.

Ingredients for the meringue:

  • whites - 6 pcs.
  • sugar - 200 g
  • starch - 50 g

Preparing meringue:

1. Beat whites with sugar until stiff peaks. Add starch.

2. Stir, put into a mold. Bake at 150 degrees for 50 minutes.

Ingredients for the cream:

  • butter - 600 g
  • condensed milk - 500 g
  • vanilla sugar - 8 g
  • cocoa - 25 g
  • dark chocolate - 1 bar

Preparing cream:

1. Beat butter. Add condensed milk and vanilla sugar.

2. Divide the cream into two parts.

3. Add cocoa to the second part and mix.

Assemble the cake:

1. Chocolate sponge cake

2. White cream

3. Meringue

4. White cream

5. White sponge cake

6. Chocolate cream

7. Coffee sponge cake

8. Chocolate cream

9. Grated chocolate.

Let the cake brew. It can be frozen.
