Soft cottage cheese stollen without yeast: the perfect dessert for the holidays

Until recently, no Christmas in Austria and Germany was complete without stollen. According to the classic recipe, it is a yeast pastry with marzipan. However, people's tastes change over time, as do recipes. Thus, people replaced marzipan with dried fruit and started using yeast-free dough.

Ukrainians liked stollen and made their own adjustments to the classic recipe. For example, a food blogger with the nickname dovgan_lily_ offers a rather interesting interpretation of stollen with the addition of cottage cheese on her Instagram.

Ingredients

  • cottage cheese from 9% - 180 gr
  • eggs - 2 pcs
  • butter - 180 gr
  • sugar - 140 g
  • salt - 0.5 tsp
  • flour - 430 g
  • baking powder - 10 g
  • ginger/cinnamon - 1 tsp each
  • nuts - 100 g
  • candied fruits/dried fruits - 200-300 g
  • juice of two oranges
  • cognac - 40 grams
  • melted butter - 100 g
  • powdered sugar - 150 g

Method of preparation

1. Rinse the dried fruits well and soak them in orange juice with cognac.

2. Beat cottage cheese and eggs with a blender until smooth.

3. Beat soft butte with salt and sugar until white using a blender.

4. Combine the resulting mass with cottage cheese and eggs and add baking powder, flour and spices.

5. Knead the dough, adding nuts and dried fruit well squeezed out of excess liquid.

6. Put the dough into the desired shape and bake in a preheated 180-degree oven for about 40 minutes. Check the readiness of the cake with a toothpick.

7. Remove the stollen from the oven, brush with melted butter, and sprinkle generously with powdered sugar on top.
