Simple cookies with kefir that turn out very crispy and puffy

The idea of making delicious sweet kefir cookies was published on the Instagram page of food blogger Svitlana (recepti_svitlana21).
Ingredients:
- kefir - 350 g
- sugar - 200 g
- eggs - 1 pc
- yolk - 1 pc
- honey - 1 tbsp
- vegetable oil - 3 tbsp
- baking soda - 1 tsp
- flour - 500-600 g
Method of preparation:
1. Beat sugar, egg, yolk and honey.
2. Add oil andkefir and beat again until smooth.
3. Then add baking soda and flour gradually and knead the dough.
4. The main thing is not to overfill the dough with flour.
5. Roll out and make cookies (keep in mind that they will increase in size by 2 times).
6. Bake at 180° degrees for 25 minutes.
7. While the cookies are baking, prepare fondant.
Ingredients for the fondant:
- whites - 1 pc
- sugar - 3 tbsp
Method of preparation:
1. Combine the ingredients.
2. Beat until the sugar dissolves but not until thick.
3. After the cookies have been baked for 25 minutes, take them out and brush with fondant (in 2 layers) and put them in the oven for another 10 minutes.
