Cheesecake is a versatile dessert that can combine a variety of flavors and techniques. There is a variant in which the mass for the cakes needs to be toasted and, at the same time, nothing needs to be baked. Because it contains a lot of coconut, the texture is very tender.
The idea of making a delicate coconut cheesecake was published on the Instagram page of food blogger Khrystyna with the nickname food_1333 .
Ingredients for the cakes:
- coconut flakes - 120
- butter - 50 g
- sweetener
Ingredients for the cream layer:
- gelatin - 15 g + water - 90 g
- mango puree - 200 g
- cream cheese - 300 g
- cream 33% - 200 g
- sweetener
Method of making cakes:
1. Put all the ingredients for the cake in a frying pan and combine when the butter has melted. Divide the mass into 2 equal parts - these will be 2 cakes, the top and the bottom.
2. Put 1/2 of it on the bottom of the split mold, smooth it out and put it in the fridge.
The method of preparing the cream layer:
1. Pour cold water over the gelatin for 5 minutes.
2. Melt the swollen gelatin in a water bath and mix well with the mango puree and pour it into the cream cheese (at room temperature).
3. Whip the cream to peaks and add to the total mass.
4. Spread on the crust and sprinkle evenly with 1/2 part of the "cake" on top.
5. Refrigerate until firm, preferably overnight.
