Sandwich and scrambled eggs at the same time: a breakfast recipe for a popular croque madame

Croque madame is a popular French breakfast that combines a hot sandwich and scrambled eggs at the same time. The dish is traditionally topped with ham, sausage, cheese and herbs. It comes out very hearty and delicious.
One of the culinary blogs (natariltsi) on Instagram published a recipe for croque madame breakfast.
Ingredients:
- toast bread (for one sandwich 2 slices)
- eggs (1 egg per sandwich)
- ham
- mozzarella cheese
For the béchamel sauce:
- butter - 40 g
- flour - 1-2 tbsp.
- milk - 200 g
- spices: ground nutmeg, salt, ancho chili.
Method of preparation:
1. Place toast bread on parchment, top with grated cheese, ham slices and grated cheese again. Cover everything with a second slice of bread.
2. Next, prepare the béchamel sauce. Put butter in a heated pan and melt it. Add flour and stir.
3. Pour milk and bring the sauce to thicken, stirring constantly. It is important to do it with a whisk so that there are no lumps.
4. At the end, add spices, stir and remove the sauce from the heat.
5. Pour the sauce over sandwiches and top with cheese. Bake in the oven at 200 degrees for 10 minutes.
6. Meanwhile, fry the scrambled egg.
7. Place scrambled eggs on sandwiches and add greens if desired. Bon appetit!
