Real Odesa forshmak: secrets of popular snack

Forshmak is a popular herring spread made in Odesa. The taste of this dish should be very delicate, and the consistency should be uniform. To achieve this, you need to pay special attention to one of the cooking stages.
The idea of making a delicate Odesa forshmak was published on the Instagram page of food blogger Marta Marnauz (martamarnauz). Instead of a whole egg, you need to add only its white: it will be much tastier.
Ingredients:
- herring - 250 - 300 g
- carrots - 150 g
- egg white - 4 pcs. (you can use whole eggs, then take 3 pcs., but it turns out incredibly tender without yolks)
- onion - 1 pc.
Method of preparation:
1. Boil eggs and carrots.
2. Separate the whites from the yolks (this will make the spread more tender, but you can add whole eggs if you like).
3. Peel the onion.
4. Put all the ingredients in a blender.
5. Grind until smooth. You can also use a meat grinder.
6. To serve, put in a bowl and garnish.
