Plum tkemali: recipe for delicious sauce for winter
Tkemali is a traditional Georgian sauce made from plums, which housewives make for the winter. The most important thing is to choose sour varieties of plums and to supplement the sauce with spicy spices: curry, hopli-suneli and coriander.
- Hungarian plums - 2 kg
- garlic - 250 g
- hot pepper - 1 pc
- sugar - 2 tbsp.
- salt - 2 tbsp.
- tomato paste - 250 g
- curry seasoning - 20 g
- hop-suneli - 10 g
- coriander - 2 tsp.
Method of preparation:
1. First prepare the plums, namely wash them and remove the pit.
2. Peel and add to the plums garlic, cut pepper. Beat the ingredients with a blender or grind through a meat grinder.
3. Add sugar, salt, tomato paste, curry, hops and coriander to the mixture. Mix everything and put on the fire. Bring to the boil and simmer for 20 minutes.
4. Pour the hot sauce into sterile jars and roll up. Done!
