Perfect pancakes that always turn out puffy and low-fat

Pancakes are a traditional breakfast option. But the preparation of such a simple dish has quite a lot of nuances. To make the dough really puffy and tender, you should choose the right base. Kefir is the best option.
The idea of preparing perfect puffy pancakes on kefir with soda is published on the page of food blogger Dina Lyashchuk (dina_liashyk) on Instagram. Products cooked according to this technology turn out to be quite low-fat.
Ingredients:
- 300 ml of 2.5% kefir
- 1 banana
- 1 egg
- 1 tbsp. sugar
- 1 bag of vanilla sugar
- 200 g flour
- 1/2 tsp. baking soda
- pinch of salt
- frying oil
Method of preparation:
1. Add lightly beaten egg, sugar, vanilla sugar, baking soda and salt to flour in a bowl.
2. Pour in kefir. Stir.
3. Grate the banana on a large-hole grater.
4. Add to the test.
5. Stir thoroughly to create a homogeneous mixture.
6. On a heated frying pan with sunflower oil, spread the batter with a tablespoon and fry the pancakes for a few minutes on each side, until a nice golden crust is formed.
7. Serve with sour cream, condensed milk, honey or any jam to taste.
