No need to throw away: what to cook for lunch from yesterday's mashed potatoes

If mashed potatoes are not eaten hot, they usually go to the trash the next day. But this product can actually still be used for cooking. It turns out to be quite a tasty and satisfying dish.
The idea of making potato pancakes from yesterday's mashed potatoes was published on the page of food blogger Kateryna Brailo (ketiv_) on Instgaram. It will also be very budget-friendly.
Ingredients:
- mashed potatoes - 200 g
- grated Parmesan cheese - 50 g
- chicken egg - 1 pc.
- wheat flour - 2 tbsp
- olive oil - 1 tbsp
- spices to taste: black pepper, garlic
- fresh parsley
Method of preparation:
1. Boil the potatoes, mash them.
2. Grate the Parmesan cheese on a fine grater, chop the parsley finely.
3. Combine the mashed potatoes with the egg, grated Parmesan, flour, chopped parsley, olive oil, spices, mix and mash again.
4. Form the potato patties with your hands (if they stick to your hands, soak them with water), brush them with olive oil.
Then you can cook in several ways:
1. Brown on a preheated frying pan/grill pan until golden brown.
2. Bake in the oven or slow cooker.
3. Bake at 180 degrees for 10 minutes (in the oven, the cooking time will be slightly longer, about 15-20 minutes).
